Pumpkin shortbread

Last night Karl and Amber came over to play games (which I lost tragically…..) but!  For treat I made pumpkin shortbread squares.

2 cups flour
1/2 cup cold butter
2 tbsp sugar
1 - 1 1/2 cups pumpkin ice cream
sugar, cloves, cinnamon

Cut butter into flour till it's nice and crumbly.  Add sugar and mix well.  Cut in softened ice cream until it forms a ball.  Refrigerate 1 hour.  Roll onto floured surface and cut into 1/4 " thickness shapes.  Rub sugar into surfaces of shapes, and garnish with cloves and cinnamon.  Bake at 375 for 10-15 minutes, or until edges are slightly crisped.  Serve warm!
